8 burrito sized tortillas
15oz can black beans, drained and rinsed
1 cup frozen corn, do not thaw
1/2 red onion
1/2 cup flat leaf parsley
1 packet taco seasoning
2 cups shredded cheddar cheese
sour cream
salsa
shredded lettuce
Instructions :
1. In small food processor, chop parsley and red onion. Dump diced onion and parsley into a large mixing bowl. Mix in black beans, frozen corn, taco seasoning, and cheese until well combined.
